    Prepare the dough

    In a medium saucepan, combine water, butter, 1 tablespoon of sugar, and salt. Bring to a boil over medium heat.

    Mix in flour

    Once boiling, remove the saucepan from heat and stir in flour until the mixture forms a ball.

    Cool and add eggs

    Allow the dough to cool for about 10 minutes. Add eggs one at a time, mixing thoroughly after each addition until the dough is smooth.

    Heat the oil

    In a deep skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Pipe the churros

    Transfer the dough to a piping bag fitted with a star tip. Pipe 4-6 inch long strips of dough into the hot oil, cutting with scissors.

    Fry until golden

    Fry churros for about 2-3 minutes on each side or until they are golden brown. Remove them and drain on paper towels.

    Coat with cinnamon sugar

    In a shallow bowl, mix 1 cup of sugar with cinnamon. Roll the fried churros in this mixture until well coated.

Chocolate Sauce

    Heat the cream

    In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.

    Melt chocolate

    Remove the saucepan from heat and add the chocolate chips. Let it sit for a minute, then stir until smooth.

    Add vanilla

    Stir in the vanilla extract until fully combined.
