Method

Chimichanga Filling Preparation

    Cook the Meat

    In a large skillet over medium heat, add the ground beef or shredded chicken. Cook until browned and cooked through, breaking it apart as necessary.

    Add Vegetables and Spices

    Add chopped onion and minced garlic to the skillet. Sauté until the onion is translucent. Stir in cumin, chili powder, salt, and black pepper. Cook for another 2 minutes.

    Combine with Beans and Cheese

    Stir in refried beans, shredded cheese, and chopped cilantro. Mix well and remove from heat.

    Prepare the Tortillas

    Warm the flour tortillas in a skillet or microwave until they are pliable.

    Fill the Tortillas

    Place a portion of the meat and bean mixture in the center of each tortilla. Fold the sides of the tortilla over the filling and then roll it up tightly from the bottom.

Frying the Chimichangas

    Heat the Oil

    In a deep skillet or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chimichangas

    Carefully place the rolled chimichangas in the hot oil, seam side down. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

    Serve the chimichangas hot, topped with sour cream, salsa, and guacamole if desired.
