    Prepare the Beef

    Cut the beef chuck roast into 1-inch chunks and season with salt and black pepper.

    Prepare the Onion and Garlic

    Dice the onion and mince the garlic cloves.

Making the Red Sauce

    Toast the Chiles

    In a dry skillet over medium heat, toast the dried New Mexico chiles for about 2-3 minutes until fragrant. Remove stems and seeds.

    Blend the Sauce

    In a blender, combine the toasted chiles, tomato sauce, chicken broth, cumin, oregano, and sugar. Blend until smooth.

Cooking the Chile Colorado

    Sauté the Beef

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the seasoned beef chunks and brown on all sides, about 5-7 minutes.

    Add Onion and Garlic

    Add the diced onion and minced garlic to the pot with the beef. Sauté until the onion becomes translucent, about 3-4 minutes.

    Combine and Simmer

    Pour the blended red sauce over the beef and onion mixture. Bring to a boil, then reduce heat to low. Cover and let simmer for about 1.5 to 2 hours, or until the beef is tender.
