Prepare the Beef
Cut the beef chuck roast into 1-inch chunks and season with salt and black pepper.

Prepare the Onion and Garlic
Dice the onion and mince the garlic cloves.
Making the Red Sauce

Toast the Chiles
In a dry skillet over medium heat, toast the dried New Mexico chiles for about 2-3 minutes until fragrant. Remove stems and seeds.

Blend the Sauce
In a blender, combine the toasted chiles, tomato sauce, chicken broth, cumin, oregano, and sugar. Blend until smooth.

Combine and Simmer
Pour the blended red sauce over the beef and onion mixture. Bring to a boil, then reduce heat to low. Cover and let simmer for about 1.5 to 2 hours, or until the beef is tender.
