    Prepare the Shrimp

    In a bowl, combine the fresh shrimp with lime juice. Make sure all shrimp are fully submerged in the lime juice to 'cook' them. Cover and refrigerate for about 30 minutes.

    Make the Marinade

    In a blender, combine the cilantro, jalapeño peppers (seeds removed for less heat if desired), salt, and black pepper. Blend until smooth. Once the shrimp are ready, mix this marinade with the shrimp and lime juice.

    Chop the Vegetables

    Thinly slice the red onion, cucumber, and tomatoes. Add these vegetables to the shrimp mixture. Gently toss everything together to combine.

    Serve

    Let the mixture marinate for an additional 10 minutes. Serve cold, topped with diced avocado.

    Prepare the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until hot.

    Fry the Tortillas

    Cut the corn tortillas into triangles. Once the oil is hot, carefully add the tortilla pieces in batches. Fry until golden and crispy, about 2-3 minutes per batch.

    Drain and Season

    Using a slotted spoon, remove the chips and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt to taste while they are still warm.

    Serve

    Serve the homemade chips alongside the camarones aguachiles for dipping.
