Preparation

    Prepare the Steak

    Remove the ribeye steak from the refrigerator and allow it to come to room temperature for about 30 minutes before cooking. This ensures even cooking.

    Season the Steak

    Rub the ribeye steak with olive oil, then season generously with kosher salt, black pepper, and garlic powder on both sides. If using, place a sprig of fresh rosemary on top of the steak.

Grilling

    Preheat the Grill

    Preheat your grill to high heat, about 450°F to 500°F (232°C to 260°C). Make sure the grates are clean and lightly oiled to prevent sticking.

    Grill the Steak

    Place the ribeye steak on the grill and close the lid. Grill for about 4-5 minutes on one side without moving it. This allows for a good sear.

    Flip the Steak

    After 4-5 minutes, flip the steak using tongs and grill for another 4-5 minutes on the other side for medium-rare. Adjust the time if you prefer it more or less cooked.

    Check for Doneness

    Use a meat thermometer to check the internal temperature. For medium-rare, it should read around 130°F (54°C).

Resting

    Rest the Steak

    Once cooked to your desired temperature, remove the steak from the grill and let it rest on a cutting board for about 5-10 minutes. This allows the juices to redistribute.

Serving

    Slice and Serve

    After resting, slice the steak against the grain and serve immediately. Enjoy your perfectly grilled ribeye steak!
