Preparing the Calamari

Clean and Prepare Calamari
If using whole calamari, clean and cut them into rings. Pat them dry with paper towels.

Prepare the Breading
In a bowl, mix the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper.

Soak in Buttermilk
Place the cleaned calamari rings in a bowl and pour buttermilk over them. Let them soak for at least 30 minutes.

Coat the Calamari
In a shallow dish, add the flour mixture. Remove calamari from buttermilk and dredge each ring in the flour mixture, ensuring they are evenly coated.
Frying the Calamari

Heat the Oil
In a large, deep pot or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in small batches. Fry for about 2-3 minutes or until golden brown and crispy.

Drain
Using a slotted spoon, remove the fried calamari and place them on paper towels to drain excess oil. Season with additional salt if desired.

Add Tomatoes and Seasonings
Stir in crushed tomatoes, red pepper flakes, dried oregano, salt, and black pepper. Bring the sauce to a simmer.

Simmer the Sauce
Reduce heat and let the sauce simmer for about 15 minutes, stirring occasionally.
Serving

Plate and Serve
Serve the fried calamari hot with a side of spicy marinara sauce for dipping.
