Method

Crust

  1. 1

    Prepare the Crust

Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

  2. 2

    Form the Crust

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Use the back of a measuring cup or your fingers to compact it. Bake in the preheated oven for 10 minutes, then remove and let cool.

Filling

  1. 3

    Mix the Filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2 minutes.

  2. 4

    Add Sugar and Sour Cream

Gradually add 1 cup of granulated sugar and mix until well combined. Then, add the sour cream and vanilla extract, blending until smooth.

  3. 5

    Incorporate Eggs

Add the eggs one at a time, mixing on low speed just until incorporated after each addition. Avoid overmixing.

  4. 6

    Add Flour

Finally, add the all-purpose flour and mix gently until just combined. Pour the filling over the cooled crust in the springform pan.

  5. 7

    Bake the Cheesecake

Bake in the oven at 325°F (160°C) for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour.

  6. 8

    Chill and Serve

Remove the cheesecake from the oven and let it cool to room temperature. Cover and refrigerate for at least 4 hours, preferably overnight. Before serving, run a knife around the edge of the pan and carefully remove the sides of the springform pan.
