Prepare the Calamari
Clean the calamari by removing the head and innards. Cut the body into rings about 1/2 inch thick.

Make the Coating
In a mixing bowl, combine all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Heat Oil
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).

Coat the Calamari
Dredge calamari rings in the flour mixture, then dip into the egg mixture, and finally coat again with the flour mixture.

Fry the Calamari
Carefully add the coated calamari to the hot oil in batches, frying them for about 2-3 minutes or until golden brown.

Drain the Calamari
Remove the calamari from the oil and drain on paper towels to remove excess oil.
Marinara Sauce

Sauté Garlic
Add minced garlic and sauté for about 1 minute until fragrant.

Combine Ingredients
Add crushed tomatoes, oregano, basil, salt, black pepper, red pepper flakes, and sugar. Stir to combine.

Simmer the Sauce
Bring the sauce to a simmer, reduce heat, and let it cook for about 15-20 minutes, stirring occasionally.

Finish the Sauce
Taste and adjust seasoning if necessary. Remove from heat.
