Battered Fish

Prepare the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and free of lumps.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, it’s ready.

Fry the Fish
Dredge each fish fillet in the batter, allowing any excess to drip off. Carefully lower the battered fish into the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes on each side or until golden brown and cooked through.

Drain
Using a slotted spoon, remove the fried fish from the oil and place them on a paper towel-lined plate to drain excess oil.

Drain and Season
Remove the fries from the oil using a slotted spoon and place them on a paper towel-lined plate. Immediately sprinkle with salt to taste.

Mix the Ingredients
In a small bowl, combine the mayonnaise, finely chopped dill pickles, capers, and fresh lemon juice. Stir until well combined.

Add salt and black pepper to taste, mixing well. Adjust the seasoning as necessary.
