Crust Preparation

Prepare the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

Press the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 8-10 minutes, then remove and let cool.
Filling Preparation

Beat the Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

Add Sugar and Sour Cream
Add granulated sugar, sour cream, and vanilla extract to the cream cheese. Mix until well combined, scraping down the sides of the bowl as necessary.

Incorporate Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Avoid overmixing.

Add Flour
Gently fold in the all-purpose flour using a spatula until no lumps remain.
Baking

Pour Filling into Crust
Pour the cream cheese filling into the cooled crust, smoothing the top with a spatula.

Bake the Cheesecake
Bake in the oven at 350°F (175°C) for 50-60 minutes, or until the edges are set and the center is slightly jiggly.

Cool and Chill
Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour. Remove from the oven and refrigerate for at least 4 hours, preferably overnight.

If using, toss fresh strawberries or blueberries with powdered sugar in a small bowl and let sit for 10 minutes.
