Battered Fish

    Prepare the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper.

    Add Beer

    Gradually whisk in the beer (or sparkling water) until the batter is smooth and well combined. Set aside.

    Heat Oil

    In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Fish

    Dip each fish fillet into the batter, coating it well.

    Fry the Fish

    Carefully place the battered fish fillets in the hot oil. Fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

    Prepare the Potatoes

    Peel the russet potatoes and cut them into long strips or wedges.

    Soak the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Heat Oil for Fries

    In another deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Fries

    Drain and pat dry the soaked potatoes, then fry them in batches for about 5-7 minutes or until golden and crispy. Remove and drain on paper towels, then sprinkle with salt.

Tartar Sauce

    Mix the Ingredients

    In a small bowl, combine the mayonnaise, chopped dill pickles, capers, lemon juice, chopped fresh dill, and salt. Stir well to combine.

    Chill

    Refrigerate the tartar sauce for at least 20 minutes before serving to allow the flavors to meld.
