Cake Preparation

- 2
Melt Chocolate and Butter
In a heatproof bowl, combine the bittersweet chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in 30-second intervals until smooth. Let it cool slightly.
- 3
Combine Eggs and Sugar
In a separate bowl, whisk together the large eggs, egg yolks, and granulated sugar until the mixture is pale and slightly thickened.
- 4
Mix Ingredients
Gently fold the melted chocolate mixture into the egg mixture. Add the vanilla extract and a pinch of salt, mixing until well combined.
- 5
Add Flour
Sift the all-purpose flour over the mixture and fold it in gently until no flour streaks remain.
- 6
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
- 7
Bake the Cakes
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is still soft.
- 8
Cool and Serve
Let the cakes cool in the ramekins for 1 minute. Invert them onto individual plates, and serve immediately with a scoop of vanilla ice cream and fresh berries if desired.
