    Heat the Milk

    In a large stainless steel pot, heat the whole milk over medium heat until it reaches 190°F (88°C). Stir gently to avoid scorching the bottom.

    Add Vinegar

    Once the milk reaches the desired temperature, remove the pot from the heat and stir in the white vinegar. Let it sit for 5 minutes to allow the curds to form.

    Add Rennet

    In a small bowl, dissolve the rennet in the water. After the milk has rested, stir in the rennet mixture for about 30 seconds.

    Let Curds Form

    Cover the pot and let it sit undisturbed for 5-10 minutes. You should see the curds begin to form.

    Cut the Curds

    Once curds have formed, cut them into 1-inch cubes with a long knife. Allow them to rest for another 5 minutes.

    Cook the Curds

    Gently stir the curds over low heat for about 5-10 minutes until they firm up. Be careful not to break them apart too much.

    Drain the Curds

    Using a slotted spoon, transfer the curds to a colander lined with cheesecloth. Allow the whey to drain for about 5 minutes.

    Sprinkle the salt over the curds and gently mix it in. The curds are now ready to be enjoyed warm or can be cooled and stored in the refrigerator.
