Method

Caramel Preparation

  1. 1

    Make the Caramel

In a medium saucepan, combine 1 cup of granulated sugar and 1 cup of water. Stir over medium heat until the sugar has dissolved.

  2. 2

    Cook the Caramel

Increase the heat to medium-high and bring the mixture to a boil. Do not stir. Allow it to boil until it turns a golden amber color, about 10-15 minutes. Watch closely to avoid burning.

  3. 3

    Pour the Caramel

Immediately pour the caramel into a round 9-inch cake pan or flan mold, tilting the pan to coat the bottom evenly. Set aside to cool and harden.

Custard Preparation

  1. 4

    Blend the Custard Mixture

In a blender, combine the eggs, sweetened condensed milk, evaporated milk, vanilla extract, and a pinch of salt. Blend until smooth and well combined.

  2. 5

    Pour the Custard

Gently pour the custard mixture over the hardened caramel in the cake pan. Ensure not to disturb the caramel layer.

  3. 6

    Prepare for Baking

Preheat the oven to 350°F (175°C). Place the cake pan in a larger baking dish and fill the outer dish with hot water until it reaches halfway up the sides of the flan pan.

  4. 7

    Bake the Flan

Bake in the preheated oven for about 50-60 minutes, or until the custard is set and a knife inserted in the center comes out clean.

  5. 8

    Cool and Refrigerate

Remove the flan from the oven and let it cool at room temperature for about 30 minutes. Then refrigerate for at least 4 hours, preferably overnight.

  6. 9

    Unmold and Serve

To unmold, run a knife around the edges of the flan. Place a serving plate over the pan and invert it to release the flan. Serve chilled.
