    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

    Cream Butter and Sugar

    In another bowl, beat the softened butter until creamy. Gradually add the granulated sugar and beat until light and fluffy.

    Add Eggs and Vanilla

    Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

    Combine Mixtures

    Gradually add the dry ingredients to the butter mixture, alternating with coconut milk. Start and end with dry ingredients. Mix until just combined.

    Bake the Cakes

    Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in pans for 10 minutes before transferring to wire racks to cool completely.

Coconut Custard Filling

    Combine Ingredients

    In a medium saucepan, combine coconut milk, sugar, cornstarch, and egg yolks. Whisk until smooth.

    Cook the Custard

    Place the saucepan over medium heat, stirring constantly until the mixture thickens and comes to a gentle boil. Remove from heat and stir in vanilla extract and shredded coconut.

    Cool the Custard

    Transfer the custard to a bowl and cover with plastic wrap directly on the surface to prevent a skin from forming. Let it cool completely.

Buttercream Frosting

    Beat Butter

    In a large bowl, beat the softened butter until creamy.

    Add Sugar and Flavoring

    Gradually add powdered sugar, beating until smooth. Add coconut milk and vanilla extract, and continue to beat until light and fluffy.

Assemble the Cake

    Layer the Cake

    Once the cakes have cooled completely, place one layer on a serving plate. Spread half of the coconut custard filling over the top.

    Top with Second Layer

    Place the second layer of cake on top of the custard filling.

    Frost the Cake

    Spread the buttercream frosting over the top and sides of the cake.

    Garnish the top of the cake with fresh coconut flakes.
