Method

Cake Layers

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C) and grease five 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together until well mixed.

  3. 3

    Combine Wet Ingredients

In a separate bowl, beat the eggs and then add in the milk, vegetable oil, and vanilla extract. Mix until fully incorporated.

  4. 4

    Combine Wet and Dry Mixtures

Add the wet ingredients to the dry ingredients and mix until just combined. Gradually stir in the boiling water until the batter is smooth and thin.

  5. 5

    Bake the Cakes

Evenly distribute the batter among the prepared cake pans. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.

  6. 6

    Cool the Cakes

Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Dark Chocolate Ganache

  1. 7

    Heat the Cream

In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Do not let it boil.

  2. 8

    Melt the Chocolate

Place the dark chocolate chips in a heatproof bowl. Once the cream is heated, pour it over the chocolate chips and let it sit for 5 minutes.

  3. 9

    Combine and Add Butter

After 5 minutes, stir the mixture until smooth. Add the unsalted butter and mix until fully melted and combined.

  4. 10

    Cool the Ganache

Allow the ganache to cool at room temperature until it thickens slightly, about 15-20 minutes.
