Prepare the Crabs
Rinse the soft shell crabs under cold water to remove any sand or debris. Pat them dry with paper towels.

Season the Crabs
Sprinkle salt and black pepper evenly over both sides of the crabs.

Coat the Crabs
In a shallow dish, mix the all-purpose flour and cornmeal together. Dredge each crab in the mixture, ensuring they are well coated.

Heat the Oil
In a large skillet or frying pan, heat the vegetable oil over medium-high heat until it shimmers.

Fry the Crabs
Carefully place the coated crabs in the hot oil, frying them in batches if necessary. Cook for about 3-4 minutes per side, or until golden brown and crispy.

Drain Excess Oil
Once cooked, remove the crabs from the oil and place them on a paper towel-lined plate to drain any excess oil.

Serve
Garnish with fresh parsley and serve immediately with lemon wedges on the side.
