Method

Preparing the Fries

  1. 1

    Cook the Fries

In a deep fryer or large pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 2

    Fry the Fries

Add the frozen French fries in batches to avoid overcrowding, and fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

Making the Cheese Sauce

  1. 3

    Melt Butter

In a saucepan over medium heat, melt the butter.

  2. 4

    Add Flour

Whisk in the flour and cook for 1-2 minutes to form a roux.

  3. 5

    Add Milk

Gradually whisk in the milk, stirring continuously until the mixture thickens.

  4. 6

    Add Cheese and Seasoning

Stir in the shredded cheddar cheese, salt, and black pepper until the cheese is fully melted and the sauce is smooth.

Preparing the Roast Beef Debris Gravy

  1. 7

    Sauté Onion and Garlic

In a separate pot, sauté the diced onion and minced garlic over medium heat until the onion is translucent, about 3-4 minutes.

  2. 8

    Add Beef and Broth

Add the shredded roast beef and beef broth to the pot, stirring well.

  3. 9

    Season the Gravy

Add Worcestershire sauce, salt, and black pepper. Let it simmer for 10 minutes to allow the flavors to meld.

Assembling the Dish

  1. 10

    Layer the Fries

On a large serving platter, layer the crispy fries evenly.

  2. 11

    Add Cheese Sauce

Drizzle the cheese sauce generously over the fries.

  3. 12

    Top with Gravy

Spoon the roast beef debris gravy over the cheese-covered fries.

  4. 13

    Add Toppings

Finish by adding sliced jalapeños and chopped green onions on top.
