Method

Preparing the Redfish

  1. 1

    Marinate the Redfish

In a small bowl, mix together olive oil, lemon juice, minced garlic, paprika, salt, and black pepper. Place the redfish fillets in a shallow dish and pour the marinade over them, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.

  2. 2

    Cook the Redfish

Preheat a grill or skillet over medium-high heat. Remove the redfish from the marinade and place it on the grill or skillet. Cook for about 4-5 minutes on each side or until the fish flakes easily with a fork. Remove from heat and set aside.

Making the Red Sauce

  1. 3

    Sauté the Vegetables

In a saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and chopped red bell peppers, cooking for another 5 minutes until the peppers are soft.

  2. 4

    Create the Sauce

Stir in the tomato sauce, oregano, red wine vinegar, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 10 minutes, stirring occasionally until slightly thickened.

Serving the Dish

  1. 5

    Plate the Dish

On a serving plate, place a portion of the grilled redfish. Generously spoon the red sauce over the fish.

  2. 6

    Garnish and Serve

Sprinkle chopped parsley over the dish and serve with lemon wedges on the side for an extra burst of flavor.
