Method

Preparing the Redfish

  1. 1

    Marinate the Redfish

In a bowl, combine the olive oil, lemon juice, minced garlic, salt, and black pepper. Whisk together until well mixed. Add the redfish fillets to the bowl and coat them evenly with the marinade. Cover with plastic wrap and let sit in the refrigerator for at least 30 minutes.

  2. 2

    Preheat the Oven

Preheat your oven to 400°F (200°C) while the fish is marinating.

Cooking the Redfish

  1. 3

    Bake the Redfish

After marinating, place the redfish fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15-20 minutes or until the fish is cooked through and flakes easily with a fork.

  2. 4

    Garnish

Once cooked, remove the fillets from the oven and sprinkle chopped fresh parsley over the top before serving.

Preparing the Side Dish

  1. 5

    Roast the Asparagus and Tomatoes

On another baking sheet, toss the trimmed asparagus and halved cherry tomatoes with balsamic vinegar, salt, and pepper. Spread them out evenly and place them in the oven alongside the redfish during the last 10-15 minutes of cooking.

Serving

  1. 6

    Plate the Dish

Once everything is cooked, serve the redfish fillets alongside the roasted asparagus and tomatoes. Enjoy your meal!
