Fried Catfish

Red Beans & Rice

    Prepare the Beans

    Rinse the red kidney beans under cold water. Soak them in water overnight or for at least 6 hours.

    Cook the Vegetables

    In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion, green bell pepper, celery, and minced garlic. Sauté for about 5-7 minutes until the vegetables are soft.

    Add Sausage and Beans

    Add the sliced andouille sausage to the pot and cook for another 2-3 minutes. Drain the soaked beans and add them to the pot.

    Simmer with Broth

    Pour in the chicken broth, add bay leaves, cayenne pepper, salt, and black pepper. Bring to a boil, then reduce heat to low and let it simmer for about 1.5 hours or until beans are tender.

    Cook the Rice

    In a separate pot, cook the long-grain white rice according to package instructions. Once cooked, fluff with a fork.

    Serve

    Remove bay leaves from the beans. Serve the red beans over a bed of rice and garnish with sliced green onions.

Fried Catfish

    Marinate the Catfish

    Place the catfish fillets in a shallow dish and cover with buttermilk. Allow to marinate for at least 30 minutes to 1 hour in the refrigerator.

    Prepare the Coating

    In a bowl, combine cornmeal, flour, cayenne pepper, salt, and black pepper. Mix well.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

    Coat the Catfish

    Remove the catfish from the buttermilk and allow excess to drip off. Dredge each fillet in the cornmeal mixture, pressing to adhere.

    Fry the Catfish

    Carefully place the coated catfish fillets in the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through.

    Drain and Serve

    Remove the fried catfish from the skillet and place on paper towels to drain excess oil. Serve immediately with the red beans and rice.
