Frying the Oysters

Prepare the Oysters
Rinse the fresh oysters under cold water and drain well. Pat dry with a paper towel.

Prepare the Breading
In a shallow bowl, mix flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, whisk together eggs and buttermilk.

Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Oysters
Carefully add the breaded oysters to the hot oil in batches, frying for about 2-3 minutes on each side until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Assembling the Sandwich

Prepare the Bread
Slice the French bread loaves in half lengthwise. Spread butter on the insides of each half.

Assemble the Sandwich
On the bottom half of each toasted bread, layer the lettuce, fried oysters, slices of tomato, and pickles.

Complete the Sandwich
Top with the other half of the bread and press down gently. Optionally, cut the sandwich in half for easier handling.
