Method
Preparation
- 1
Mix Dry Ingredients
In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, and sugar. Whisk the ingredients together until they are well blended.
- 2
- 3
Combine Ingredients
Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix. The batter should be thick and slightly lumpy.
Frying
- 4
Heat Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises, the oil is ready.
- 5
Fry Hushpuppies
Using a tablespoon or a small scoop, drop spoonfuls of the batter into the hot oil. Fry in batches, being careful not to overcrowd the pan. Cook for about 3-4 minutes, or until golden brown, turning them halfway through.
- 6
Drain Excess Oil
Once golden brown, use a slotted spoon to remove the hushpuppies from the oil and place them on a plate lined with paper towels to drain excess oil.
