Prepare the Shrimp
In a medium bowl, combine the cornmeal, all-purpose flour, Cajun seasoning, salt, and black pepper. In another bowl, whisk the egg and buttermilk together. Dip each shrimp into the buttermilk mixture, then coat with the cornmeal mixture.

Fry the Shrimp
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded shrimp in batches, frying for about 2-3 minutes per side until golden brown. Remove and place on paper towels to drain excess oil.

Assemble the Po'boy
Slice the French bread in half horizontally. Spread remoulade sauce on both sides. Layer with shredded lettuce, sliced tomatoes, pickles, and fried shrimp. Close the sandwich and cut in half if desired.
Seafood Gumbo

Cook the Sausage
In a large pot, cook the sliced Andouille sausage over medium heat until browned. Remove and set aside.

Make the Gumbo Base
Add the cooked sausage back into the pot along with the chicken stock, bay leaves, okra, and Cajun seasoning. Bring to a simmer and cook for about 30 minutes.

Add Shrimp
In the last 5 minutes of cooking, add the shrimp and season with salt and black pepper to taste. Remove the bay leaves before serving.

Serve
Ladle the gumbo into bowls and garnish with chopped green onions. Serve hot alongside the shrimp po'boy.
