Prepare the Seafood
In a large bowl, combine the shrimp, crab meat, and crawfish tails. Set aside.

Make the Roux
In a large pot over medium heat, add a little oil and sprinkle in flour. Stir continuously until the roux turns a dark brown color, about 15-20 minutes.

Add Broth and Spices
Pour in the vegetable broth and add the diced tomatoes, bay leaves, Cajun seasoning, salt, and black pepper. Stir well to combine.

Simmer the Gumbo
Bring the mixture to a boil, then reduce the heat to low. Let it simmer for 30 minutes, stirring occasionally.

Add Seafood and Okra
After 30 minutes, add the prepared seafood and sliced okra to the pot. Cook for an additional 10-15 minutes until the seafood is cooked through.
Serving

Garnish and Serve
Remove the bay leaves and ladle the gumbo into bowls. Garnish with chopped green onions and fresh parsley. Serve hot, with hot sauce on the side.
