Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a mixing bowl, combine 4 tablespoons of olive oil, 2 tablespoons of lemon juice, minced garlic (2 cloves), 1 teaspoon of salt, and 1 teaspoon of black pepper. Whisk together until well blended.

  2. 2

    Add Salmon to Marinade

Place the salmon fillets in the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes to allow flavors to meld.

Preparing the Vegetables

  1. 3

    Chop the Vegetables

Slice the zucchini (2 pieces) and red bell pepper (1 piece) into bite-sized pieces. Trim the woody ends off the asparagus (200 grams).

  2. 4

    Season the Vegetables

In a bowl, toss the chopped zucchini, red bell pepper, and asparagus with 2 tablespoons of olive oil, 1 teaspoon of salt, and 1 teaspoon of black pepper until well coated.

Grilling

  1. 5

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

  2. 6

    Grill the Salmon

Remove the salmon from the marinade and place on the grill. Cook for approximately 4-5 minutes on each side, or until the internal temperature reaches 145°F (63°C).

  3. 7

    Grill the Vegetables

While the salmon is grilling, place the seasoned vegetables on the grill. Grill for about 5-7 minutes, turning occasionally until they are tender and slightly charred.

Serving

  1. 8

    Plate the Dish

Once cooked, remove the salmon and vegetables from the grill. Serve the grilled salmon alongside the seasonal vegetables on a plate.

  2. 9

    Garnish (optional)

You may garnish with fresh herbs like parsley or dill if desired.
