Crab Cake Preparation

    Mix Ingredients

    In a large mixing bowl, combine the lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, egg, breadcrumbs, salt, and black pepper. Mix gently to combine without breaking the crab meat.

    Form Cakes

    Using your hands, form the mixture into two large crab cakes, about 1 inch thick. Place them on a plate and refrigerate for at least 30 minutes to help hold their shape.

    Cook Crab Cakes

    In a large skillet, heat olive oil over medium heat. Once hot, carefully add the crab cakes to the skillet. Cook for about 4-5 minutes on each side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.

    Prepare Onions

    Slice the medium onion into thick rings. In the same skillet used for the crab cakes, add butter and heat over medium heat. Add the onion rings and grill them for about 5-7 minutes, or until they are caramelized and tender.

    Melt Cheese

    After the onions are cooked, place the crab cakes back in the skillet. Top each crab cake with 2 oz of pepper jack cheese. Cover the skillet with a lid and let the cheese melt for about 2-3 minutes.

    To serve, place each crab cake on a plate, topped with the grilled onions and melted pepper jack cheese. Enjoy hot!
