Method
Preparation

- 2
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until fully melted and smooth. Remove from heat and let it cool slightly.
- 3
Mix Sugar and Eggs
In a separate mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is pale and slightly thickened.
- 4
Combine Mixtures
Pour the melted chocolate mixture into the egg mixture. Add the vanilla extract and a pinch of salt. Gently fold in the all-purpose flour until just combined.
- 5
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
Baking
- 6
Bake the Cakes
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft. Do not overbake.
- 7
Cool Slightly
Remove the ramekins from the oven and let them cool for 1-2 minutes. This will help the cakes to settle slightly.
- 8
Serve
Carefully run a knife around the edges of each cake and invert onto a plate. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream on the side.
