Method
Crust
- 1
Prepare the crust
Preheat your oven to 325°F (160°C). In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are well coated.
- 2
Form the crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Use the bottom of a measuring cup to pack it down tightly.
- 3
Bake the crust
Place the crust in the preheated oven and bake for 10 minutes. Remove from the oven and allow to cool while you prepare the filling.
Filling
- 4
Mix the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add the granulated sugar and sour cream, mixing until well combined.
- 5
Add flavorings and eggs
Mix in the vanilla extract and then add the eggs one at a time, mixing on low speed just until incorporated. Avoid overmixing. Finally, sift in the all-purpose flour and mix until just combined.
- 6
Pour filling into the crust
Pour the cheesecake filling over the cooled graham cracker crust, smoothing the top with a spatula.
- 7
Bake the cheesecake
Bake in the preheated oven for 55-60 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
