Method

Preparation

  1. 1

    Prepare the Catfish

Rinse the catfish fillets under cold water and pat them dry with paper towels.

  2. 2

    Set Up Breading Station

In a shallow dish, combine the flour, salt, black pepper, and paprika. In another shallow dish, whisk together the eggs and milk until well blended. In a third dish, place the cornmeal.

Cooking

  1. 3

    Heat the Oil

In a large skillet, heat the cooking oil over medium-high heat until it reaches 350°F (175°C).

  2. 4

    Bread the Catfish

Dredge each catfish fillet in the flour mixture, shaking off the excess. Dip into the egg and milk mixture, then coat with the cornmeal, pressing it into the fillet to adhere.

  3. 5

    Fry the Catfish

Carefully place the breaded catfish fillets into the hot oil. Fry in batches to avoid overcrowding the skillet. Cook for about 4-5 minutes on each side or until golden brown and cooked through.

  4. 6

    Drain and Serve

Once cooked, remove the catfish from the skillet and place on paper towels to drain excess oil. Serve hot with lemon wedges and tartar sauce on the side, if desired.
