Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow or damaged outer leaves. Cut each sprout in half lengthwise.

Season the Sprouts
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until they are evenly coated.

Roast the Brussels Sprouts
Spread the Brussels sprouts in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and crispy, tossing halfway through for even cooking.

Add Sweet Chili Sauce
Once the Brussels sprouts are crispy, remove them from the oven and transfer them back to the large bowl. Pour in the sweet chili sauce and toss until the sprouts are well coated.

Garnish with Sesame Seeds
Sprinkle the sesame seeds over the sauced Brussels sprouts before serving.
