    Prepare the Celery Root Puree

    In a medium saucepan, combine the diced celery root and enough water to cover. Bring to a boil, then reduce heat and simmer until the celery root is tender, about 15-20 minutes. Drain and return to the saucepan.

    Make the Plum Sauce

    In a small saucepan, combine the diced plums, sugar, apple cider vinegar, salt, and pepper. Cook over medium heat until the plums break down and the sauce thickens, about 10 minutes.

    Prepare the Duck Breasts

    Score the skin of the duck breasts in a crisscross pattern, being careful not to cut into the meat. Season both sides with salt and pepper.

    In a large skillet, heat olive oil over medium-high heat. Place the duck breasts skin-side down in the skillet. Cook for 6-8 minutes until the skin is crispy and golden brown.

    Flip the duck breasts and cook for an additional 4-6 minutes for medium-rare, or until desired doneness is achieved.
