- 1
Roasting the Tomatoes
Preheat your oven to 400°F (200°C). On a baking sheet, toss the cherry tomatoes with 2 tablespoons of olive oil, salt, and pepper. Roast in the oven for about 20 minutes, or until the tomatoes are blistered and caramelized.

Cooking the Spaghettini
While the tomatoes are roasting, bring a large pot of salted water to a boil. Add the spaghettini and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghettini.

Sautéing the Shrimp
In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes.

Combining Ingredients
Add the roasted tomatoes, cooked spaghettini, and fresh basil to the skillet with the shrimp. Toss everything together, adding reserved pasta water a little at a time until the desired consistency is reached. Stir in the grated Parmesan Reggiano and season with additional salt and pepper to taste.
