    Prepare the Shrimp or Oysters

    If using shrimp, peel and devein them. If using oysters, shuck them carefully. Season with salt and black pepper.

    Make the Hot Sauce

    In a small bowl, mix the homemade hot sauce with mayo until well combined. Adjust the heat level to taste.

    Fry the Seafood

    Heat the cooking oil in a deep skillet or fryer. Once hot, carefully add the shrimp or oysters and fry until golden brown, about 3-4 minutes for shrimp or 2-3 minutes for oysters. Remove and drain on paper towels.

    Prepare the Vegetables

    Slice the tomato and onion into thin rings.

    Assemble the Po'Boy

    Slice the French bread lengthwise, leaving one side attached. Spread a generous amount of the mayo-hot sauce mixture on both sides. Layer the fried shrimp or oysters, followed by tomato and onion slices.

    Serve the Po'Boy sandwiches with a side of fries. Enjoy!
