Directions

  1. 1

    Prepare the Sticky Rice

Rinse the sticky rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight. Drain and steam the rice for about 30-40 minutes or until tender.

  2. 2

    Prepare the Romanesco

Cut the romanesco into florets and steam or blanch until just tender, about 5-7 minutes. Toss the cooked romanesco with barbecue sauce and grill for an additional 3-5 minutes until charred.

  3. 3

    Grill the Salmon

Preheat the grill to medium-high heat. Season the salmon fillets with olive oil, salt, and pepper. Grill the salmon skin-side down for about 6-8 minutes, then flip and cook for an additional 4-6 minutes or until cooked through.

  4. 4

    Make the Citrus-Herb Vinaigrette

In a small bowl, whisk together the citrus juice, olive oil, chopped fresh herbs, salt, and pepper to taste.

  5. 5

    Serve

Plate the sticky rice, top with grilled salmon, add the barbecue-glazed romanesco on the side, and drizzle with citrus-herb vinaigrette before serving.
