Ribeye Steak

Method

Prepare the Ribeye

    Season the Steak

    Rub the ribeye steaks with olive oil, salt, and pepper on both sides.

    Cook the Steak

    Heat a skillet over medium-high heat. Add the steaks and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved.

    Rest the Steak

    Remove the steaks from the skillet and let them rest for at least 5 minutes before serving.

Make the Demi Glaze

    Sauté Shallots

    In the same skillet used for the steaks, add minced shallots and sauté until softened.

    Deglaze with Wine

    Pour in the red wine and scrape up any browned bits from the skillet. Let it simmer until reduced by half.

    Add Beef Stock

    Add beef stock and thyme sprigs, then simmer until the sauce thickens. Finish with butter for a silky texture.

Prepare Potato Au Gratin

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Layer the Potatoes

    In a buttered baking dish, layer half of the sliced potatoes, then sprinkle with garlic, salt, pepper, and half of the cheeses. Repeat with remaining potatoes and cheeses.

    Add Cream

    Pour the heavy cream evenly over the layered potatoes.

    Bake

    Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden and bubbly.
