    Prepare the Fries

    Wash and peel the russet potatoes. Cut them into uniform sticks to make fries. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain the soaked fries and pat them dry with paper towels. Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels. Season with salt.

    Heat the Gravy

    In a saucepan, heat the beef gravy over medium heat until it is hot and simmering.

    Assemble the Poutine

    Place a generous portion of hot fries on a plate. Top with cheese curds and pour the hot beef gravy over the fries and cheese curds. Serve immediately.
