    Prepare the Breading

    In a bowl, mix the cornmeal, flour, salt, black pepper, and cayenne pepper.

    Coat the Oysters

    Dip each oyster in buttermilk, then dredge in the cornmeal mixture until well-coated.

    Heat the Oil

    In a large skillet or fryer, heat the vegetable oil over medium-high heat until hot.

    Fry the Oysters

    Carefully add the coated oysters to the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

    Prepare the Bread

    Slice the French bread or baguette lengthwise, leaving one side attached.

    Assemble the Po'boy

    Spread mayonnaise on the inside of the bread, then layer with lettuce, fried oysters, sliced tomatoes, and onions. Drizzle with hot sauce to taste.

    Serve with Fries

    Serve the Po'boy with a side of cooked fries.
