    Prepare the lobster salad

    In a large bowl, combine the lobster meat, mayonnaise, diced celery, lemon juice, salt, and black pepper. Mix well and refrigerate for at least 30 minutes to allow the flavors to meld.

    Make housemade chips

    Slice the potatoes into thin rounds. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potato slices in batches until golden brown and crispy, about 3-4 minutes per batch. Drain on paper towels and season with salt.

    Prepare coleslaw

    In a bowl, combine the coleslaw mix and coleslaw dressing. Toss to coat evenly and refrigerate until serving.

    Toast the buns

    Brush the inside of each hot dog bun with melted butter and toast on a skillet over medium heat until golden brown.

    Assemble the lobster rolls

    Fill each toasted bun with a generous portion of the lobster salad. Serve with housemade chips and coleslaw on the side.
