Prepare the Leeks
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped leeks and sauté for about 5 minutes until they are soft and translucent. Season with salt and pepper, then remove from heat.

Cook the Prosciutto
In another skillet, add the remaining tablespoon of olive oil and cook the prosciutto until crispy. Remove from the skillet and let it drain on paper towels.

Make the Omelette
In a bowl, whisk together the eggs, salt, and pepper. Pour the egg mixture into a non-stick skillet over medium heat. Cook until the edges set, then add the sautéed leeks and Gruyere cheese on top.

Finish the Omelette
Once the cheese starts to melt, fold the omelette in half and let it cook for another minute. Drizzle with truffle oil before serving.

Serve
Plate the omelette and crumble the crispy prosciutto on top. Serve with a side of sautéed potatoes or a fresh green salad.
