Method
Preparing the Pork Chop

Marinate the Pork Chops
In a bowl, mix together honey, Dijon mustard, olive oil, salt, and black pepper. Coat the pork chops in the marinade and let sit for at least 30 minutes.

Preparing the Sweet Potato Mash

Cook the Sweet Potatoes
Peel and cube sweet potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and mash with butter, milk, and salt.
Preparing the Mustard Greens

Sauté the Mustard Greens
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add mustard greens and cook until wilted, about 3-4 minutes. Season with salt.
Preparing the Warm Cherry Sauce

Make the Cherry Sauce
In a small saucepan, combine cherry preserves and balsamic vinegar. Heat over medium-low until warmed through, stirring occasionally.
