Pork Chop

Sweet Potato Mash

Mustard Greens

Warm Cherry Sauce

Method

Preparing the Pork Chop

  1. 1

    Marinate the Pork Chops

In a bowl, mix together honey, Dijon mustard, olive oil, salt, and black pepper. Coat the pork chops in the marinade and let sit for at least 30 minutes.

  2. 2

    Grill the Pork Chops

Preheat the grill to medium-high heat. Grill the pork chops for about 6-7 minutes on each side or until the internal temperature reaches 145°F (63°C).

Preparing the Sweet Potato Mash

  1. 3

    Cook the Sweet Potatoes

Peel and cube sweet potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and mash with butter, milk, and salt.

Preparing the Mustard Greens

  1. 4

    Sauté the Mustard Greens

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add mustard greens and cook until wilted, about 3-4 minutes. Season with salt.

Preparing the Warm Cherry Sauce

  1. 5

    Make the Cherry Sauce

In a small saucepan, combine cherry preserves and balsamic vinegar. Heat over medium-low until warmed through, stirring occasionally.

Serving

  1. 6

    Plate the Dish

Serve the grilled pork chop with a side of sweet potato mash and sautéed mustard greens, drizzled with warm cherry sauce.
