Zucchini Fritters

    Prepare the Zucchini

    Grate the zucchini and place it in a clean kitchen towel. Squeeze out excess moisture.

    Make the Fritter Mixture

    In a bowl, combine the grated zucchini, flour, eggs, Parmesan cheese, salt, and pepper. Mix until well combined.

    Cook the Fritters

    Heat olive oil in a skillet over medium heat. Drop spoonfuls of the mixture into the skillet and flatten slightly. Cook for 3-4 minutes on each side until golden brown. Remove and keep warm.

Sauteed Spinach

    Sauté the Spinach

    In a separate skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the spinach, salt, and pepper, and cook until wilted, about 3-4 minutes.

Grilled Asparagus

    Prepare the Asparagus

    Trim the woody ends off the asparagus. Toss with olive oil, salt, and pepper.

    Preheat a grill or grill pan over medium-high heat. Grill the asparagus for about 5-7 minutes, turning occasionally, until tender and slightly charred.

Assembly

    On a plate, layer the zucchini fritters, topped with sautéed spinach and grilled asparagus. Serve with a side of seasonal fruit.
