Prepare the Beef
Season the beef roast with salt and black pepper on all sides.

Sear the Beef
In a large skillet over medium-high heat, sear the beef roast on all sides until browned (about 3-4 minutes per side).

Cook the Beef
Transfer the seared beef to a slow cooker. Add the sliced onion, minced garlic, Worcestershire sauce, thyme, and beef broth. Cover and cook on low for 8 hours or on high for 4 hours until the beef is tender.

Shred the Beef
Once cooked, remove the beef from the slow cooker and shred it using two forks.

Prepare the Rolls
Slice the French rolls in half. If desired, you can toast them lightly.

Assemble the Sandwiches
Fill each roll with shredded beef and a slice of provolone cheese.

Serve the sandwiches with a small bowl of the beef broth for dipping.
