    Prepare the Fish

    Season the fresh fish fillet with salt and pepper. In a skillet over medium heat, cook the fish for about 4-5 minutes on each side, or until fully cooked and flaky. Remove from heat and set aside.

    Toast the Rye Bread

    Spread butter on one side of each slice of rye bread. In the same skillet, toast the bread until golden brown on the buttered side.

    Assemble the Sandwich

    On the unbuttered side of two slices of rye bread, layer the cooked fish, Swiss cheese, and homemade sauerkraut. Spread one tablespoon of Thousand Island dressing on each of the remaining two slices of bread and place them on top, dressing side down.

    Grill the Sandwich

    Return the assembled sandwiches to the skillet and grill for about 3-4 minutes on each side, or until the cheese has melted and the bread is crispy.

    While grilling the sandwiches, cook the fries according to package instructions or your preferred method.
