    Caramelizing the Onions

    In a large pot, melt the butter with olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.

    Adding Aromatics

    Add the minced garlic, thyme, bay leaves, salt, and black pepper to the onions. Cook for another 2-3 minutes until the garlic is fragrant.

    Deglazing the Pot

    Pour in the white wine, scraping the bottom of the pot to release any browned bits. Cook until the wine has reduced by half.

    Adding Broth

    Pour in the beef broth and bring the soup to a boil. Reduce the heat and let it simmer for 30 minutes. Adjust seasonings to taste.

    Preparing the Croutons

    While the soup simmers, preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet and toast in the oven until golden brown, about 10-15 minutes.

    Once the soup is ready, remove bay leaves and ladle the soup into oven-safe bowls. Top each bowl with toasted baguette slices and a generous amount of the three cheeses.
