Method

Preparing the Fries

    Cutting the Potatoes

    Wash the Russet potatoes thoroughly and cut them into thin strips (about 1/4 inch thick).

    Soaking the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Drying the Potatoes

    Drain and pat the potatoes dry with a clean kitchen towel.

    Heating the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Frying the Potatoes

    Carefully add the dried potato strips to the hot oil in batches. Fry until golden brown and crispy, about 5-7 minutes.

    Draining and Salting

    Remove the fries from the oil and drain on paper towels. Immediately sprinkle with salt.

Making the Chili Mayo

    Mixing Ingredients

    In a bowl, combine mayonnaise, chili powder, lemon juice, garlic powder, and salt. Mix well until smooth.

Serving

    Plate the Fries

    Serve the hot fries on a plate with a side of chili mayo for dipping.
