    Boil the Eggs

    Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium heat. Once boiling, cover the saucepan and remove it from heat. Let sit for 12 minutes.

    Cool and Peel

    Transfer the eggs to a bowl of ice water to cool for about 5 minutes. Once cooled, gently tap and peel the eggs under running water.

    Prepare the Filling

    Slice the peeled eggs in half lengthwise and remove the yolks. In a bowl, combine the yolks with flaked smoked trout, mayonnaise, Dijon mustard, lemon juice, chopped chives, salt, and pepper. Mix until smooth.

    Fill the Eggs

    Spoon or pipe the filling back into the egg whites.

    Garnish and Serve

    Garnish with additional chives or a sprinkle of smoked paprika if desired. Serve chilled.
