Deep Fried Oysters

Method

Garlic Aioli

    Prepare the Garlic Aioli

    In a mixing bowl, combine 1 cup of mayonnaise, 2 cloves of minced garlic, 1 tablespoon of lemon juice, and salt to taste. Mix well until smooth and creamy.

    Prepare the Oysters

    Rinse the fresh oysters under cold water and shuck them carefully, placing them on a paper towel to drain.

    Set Up Breading Station

    In one bowl, place the flour mixed with salt, pepper, and garlic powder. In a second bowl, whisk together the buttermilk and eggs. In a third bowl, place the cornmeal.

    Coat the Oysters

    Dip each oyster first in the flour mixture, then in the buttermilk and egg mixture, and finally coat with cornmeal.

    Fry the Oysters

    Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the oysters in batches until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

    Serve the deep-fried oysters hot with the garlic aioli on the side for dipping.
