Crispy Fried Calamari

Preparation and Cooking

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Marinate
In a bowl, combine the buttermilk, salt, black pepper, and garlic powder. Add the calamari rings and marinate for at least 30 minutes.

Prepare the Breading
In a separate bowl, mix the all-purpose flour and cornstarch together. This will be used for breading the calamari.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Calamari
Remove the calamari from the buttermilk marinade, allowing excess to drip off. Dredge each ring in the flour-cornstarch mixture, ensuring an even coating.

Fry the Calamari
Carefully add the breaded calamari to the hot oil in batches, frying for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Garnish and Serve
Chop the chives and sprinkle them over the fried calamari. Serve hot with rustic tomato sauce and fermented hot sauce on the side.
