Pasta Preparation

Cook the Linguine
In a large pot of boiling salted water, cook the linguine pasta according to package instructions until al dente. Drain and set aside.
Shrimp and Vegetables

Sauté the Shrimp and Vegetables
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.

Add Shrimp and Spinach
Add the shrimp to the skillet and cook until pink and opaque, about 3-5 minutes. Stir in the sun-dried tomatoes and fresh spinach, cooking until the spinach wilts.
Cream Sauce

Prepare the Cream Sauce
Pour the heavy cream into the skillet and bring to a simmer over medium heat. Stir in the grated Parmesan cheese. Season with salt and black pepper to taste.
Combine and Serve

Serve the Toscana hot, garnished with additional Parmesan cheese if desired.
